I fucking love Tastespotting.com like I fucking love arugula. Its a site that I can spend hours on, getting ideas and drooling over food. When I was there the other day, I came across some delicious looking Cheesy Quinoa Bites from Becky over at So Very Blessed. Her site is sweet and fun and I’m sure she doesn’t have a mouth like a sailor like I do, but MAN, can this woman whip up a good cheesy quinoa bite! Just a few simple ingredients make these snackable baked yummies delicious.

So this recipe has been making the rounds on the Internet lately. I have no idea who came up with it originally, but I followed this recipe from Sing For Your Supper this past Super Bowl weekend.

We used real chicken, not canned, but it was a store bought rotisserie one, still pretty tasty. I personally would have added more hot sauce to it, but I didn’t want to burn everyone’s face off.
Served with celery, sourdough bread, carrots.
I’m thinking that I want to stuff it into portabella mushrooms next time. mmm
I may or may not have eaten this for breakfast this morning. >.<
